The Melbourne International Coffee Expo (MICE) has announced that ST. ALi will make a comeback to the latest dedicated event in the Southern Hemisphere, as the event’s official Providore Sponsor.
“ST. ALi had a temporary reprieve from MICE while it focused on building strong foundations in its roastery facility, in our personel and at origin, and now we’re back to spread a message,” ST. ALi Founder Salvatore Malatesta says.

Mario Fernández has a growing list of more than 50 problems, but his determination is not one. Rather, his spreadsheet of issues consist of common coffee processing myths he says are simply rumours that have circulated like a bad case of Chinese whispers.
For the past few years, that’s included the poor quality and mistrust of natural processed coffees, false claims about yeast fermentation and honey-processing methods, and one of Mario’s particular favourites – people preferring solar drying over mechanical drying just because it’s “more environmentally friendly”.

Mario Fernández, Technical Director at the Coffee Quality Institute (CQI), has wrapped up the 12thinstalment of Toby’s Estate’s Knowledge Talks.
Mario travelled to Sydney, Brisbane and Melbourne from 23 to 28 August, talking to audience members about different processing methods, microbial inoculation in coffee fermentation, the development of fruity characteristics in natural coffees, and CQI’s Q Processing program.
