Campos Coffee is launching its Lab Series, a curation of unique single origin coffees, with its first release, ‘Peaches’.
Earlier this year, Peaches was entered into and won a Best in Class Gold Medal at the 2022 Australian International Coffee Awards (AICA) and a Gold Medal at the long-standing Golden Bean Awards.
The unique flavour profile comes from a 72-hour dry anaerobic ferment process, which takes place with dehydrated peaches and tartaric, giving the beans a fruity characteristic.
The Castillo beans used to create Peaches are produced in the heart of Colombia’s famous coffee-growing triangle, the ‘Zona Cafetera’, by third-generation coffee farmer Jairo Arcila.
For 45-years, Jairo’s family farm, Santa Monica has been growing some of the world’s best coffee beans in the rich volcanic soil of Armenia, in Colombia’s Quindio region.
The happy outcome of an experimental microlot ‘Peaches’ is the result of Jairo looking for a sustainable solution to an overabundance of fruit in the local market during COVID-19 lockdowns. By adding fruit to his fermentation process Jairo was able to elevate the flavours of the typically mild-flavoured Castillo bean variety to something quite unique.
Campos is thrilled to be able to share the results of Jairo’s experimentation.
Over the years the Campos single origin program has served as both a platform to offer Australian’s one of the world’s finest specialty coffees and as a celebration of the people who make them.
`According to Campos, the coffees it’s presented have been exemplary of their origin, capturing the distinct flavours, individual stories and trends of the time and place in which they were made.
