“Using Califia’s Vanilla Oat Milk in these dreamy chocolate muffins works a treat. The creamy texture and naturally sweet taste are so delicious, bonus – the milk is fortified with Calcium, Vitamin D and has no added sugar,” says Eden Gokkaya.
Recipe: Makes 6 to 8
Ingredients:
▪️1/2 cup Califia Farms Vanilla Oat milk
▪️1 tsp apple cider vinegar
▪️1 tsp vanilla extract
▪️1/3 cup coconut oil (or alternatively vegetable oil)
▪️1 cup plain baking flour
▪️1 tsp baking powder
▪️1/4 cup cocoa powder
▪️1/2 cup raw sugar
▪️1/4 cup dairy free dark choc chips
Method:
- Preheat oven to 180°C.
- In a large bowl, combine the Califia vanilla oat milk with coconut oil, apple cider vinegar and vanilla extract.
- Add the flour, baking powder, cocoa powder and sugar. Mix together to form a thick batter but do not over mix, only until the flour is no longer visible.
- Spoon mixture evenly into a greased or lined muffin pan. Sprinkle the choc chips on top of each muffin and bake for 25 mins or until a skewer comes out clean.
- Let them rest in the muffin pan for 15 mins before transferring to a cooling rack.
