Ona Coffee to host variables masterclass

From the August 2017 issue.

Ona Coffee members will speak at a masterclass event at Seven Miles Coffee Roasters in Sydney on 11 August.

The event, titled ‘Understanding and controlling the variables', will see three of Ona Coffee's key figures give talks on different aspects of specialty coffee.

Ona Coffee Director and 2015 World Barista Champion, Sasa Sestic, will share his findings from experiments with fermentation. He will present parts of the speech he gave at Re:Co at World of Coffee 2017 in Budapest, and discuss whole cherry carbonic maceration, a new process developed through collaboration with Project Origin and Finca Deborah in Panama.

Current Australian Barista Champion and Ona Coffee Head Trainer, Hugh Kelly, will discuss the importance of distribution in preparation of espresso, and new findings on the relationship between water, roasting and the shapes of distribution tools.

World Brewers Cup 2017 Runner-Up and Ona Coffee Head Roaster, Sam Corra, will share his experience and techniques used in preparation for and during his performance at the World Brewers Cup 2017, in Budapest.

There will also be some blind espresso testing at the event.
