Ona Coffee Marrickville will host a cupping session of Project Origin’s Carbonic Maceration (CM) Selections series on 2 October.
The cupping session will allow participants to taste coffees from the different categories of the CM series, including Jasper, Indigo and Diamond coffees.
CM Selection coffees exist in washed and natural processes and involve the careful control of specific yeasts during fermentation to create particular flavour experiences.
Agniezska Rojewska of Poland used CM Selections Diamond to win the 2018 World Barista Championship while New Zealand Barista Champion John Gordan placed sixth using Jasper.
Ona will sell CM Selections tasting flights, which include three 200-gram bags of different carbonic maceration-processed coffees in a custom gift box.
The gift boxes will include the espresso-roasted CM Selections Diamond 1318, milk-based espresso-roasted CM Selections Jasper 0810, and the filter-roasted CM Selections Indigo 0718.
Tickets to the event are $10, which covers entry and a Project Origin cupping spoon.

Officially launched in 2018, CM Selections is a series of experimental coffees created through collaboration with producers across the globe using the carbonic maceration method of fermentation.
Carbonic maceration was first introduced to the coffee world by Project Origin founder, Saša Šestić during the 2015 World Barista Championship in Seattle. Since then, Project Origin has researched and developed a range of carbonic maceration techniques in a variety of countries.
