Queen Victoria Market seeks hospitality vendors for state-of-the-art Food Hall

Historic Melbourne landmark Queen Victoria Market is seeking expressions of interest from food and beverage operators to fill its revitalised Food Hall which is estimated to open from July 2022.

The market has been working with food and hospitality consultants Future Food, and is seeking confident and capable operators who will showcase local produce within unique food and beverage areas.

This includes a range of cuisine styles and beverage offerings from takeaway, casual dining and restaurant sectors. Vendors for all-day cafés, sweets and treats, and more are all being sought, with the Queen Victoria Market already home to more than 600 small businesses.

“We are excited to be working with Future Food to continue to deliver memorable food experiences that have become so synonymous with the Market,” says Stan Liacos, CEO of Queen Victoria Market.

“We cannot wait to expand our food and beverage offer at Queen Victoria Market in our new, state-of-the-art Food Hall.”

The market’s expression of interest application asks operators to demonstrate ability across six key criteria including background and experience, food and beverage concepts, product offering and service style, company details and sustainability policy, operations and logistics, and financial costings.

The Food Hall upgrade is expected to create a new social destination within the market, showcasing Melbourne’s “unrivalled foodie culture” and is predicted to become more than just a place to eat between shopping.

The new area will also have a dedicated space for customers to relax and enjoy the Melbourne atmosphere.

Located on the corner of Victoria and Queen Street, Queen Victoria Market is one of Melbourne’s most densely populated and growing neighbourhoods. Due to this, it is predicted that this will provide new Food Hall operators with opportunities for extended trading hours, year-round appeal and street-front dining.

Expression of interests are now open and will close on 30 September. Shortlisted applicants will be notified in late October and invited to present their offerings in a formal presentation in December.

Successful operators will be notified in January 2022.
