Toby’s Estate releases new Flavour Savour coffee blend

Sydney roaster Toby’s Estate has launched the latest edition in its Flavour Savour coffee series, Pandan Waffle.

Based on the traditional Vietnamese treat, the Pandan Waffle coffee was created by Toby’s Estate roaster Danny Cao in collaboration with coffee farmer Rodrigo Sánchez Valencia in Colombia. Danny recently placed second in the 2024 Australian Specialty Coffee Association National Coffee Roasting Championships.

“We love to keep things interesting with our Flavour Savour blends, and who doesn’t love a waffle?,” says Danny.

“Rodrigo uses an innovative process to infuse the flavours into the coffee beans during the fermentation process. It’s then up to us to roast the coffee to bring out the highlights and then blend the different flavours together to achieve the final product.”

Pandan Waffle has tasting notes of pine lime ice cream, coconut cream, and melons.

“Pandan Waffle is a unique blend of the different infused beans: we’ve used a combination of melons, tropical, and peach to achieve our final flavour profile,” Danny says.

“Our coffee team is full of experience and expertise and we spend a lot of time making sure the ratios of the coffees we select bring out the flavours we want. We always want the end consumer to be able to taste what we put on the front of the bag.”

Previous editions in the Toby’s Estate Flavour Savour series include Butterscotch Pudding, Banana Split, Crème Brulée, and Blueberry Crumble.

Toby’s Estate will be hosting free tastings in Sydney, Melbourne, and Perth throughout March and April, with a special ticketed event in Newcastle.

Pandan Waffle is best served with milk and available in 200 gram and 1 kilogram bags. It is available to buy online and from selected cafés from 18 March.
