Toby’s Estate releases Shift Volume 2

Toby’s Estate has announced the release of Shift Volume 2, the next edition of the coffee roaster’s series challenging perceptions and changing coffee experiences.

For this volume, Toby’s Estate has turned its attention to roasting techniques and how this can impact the end coffee result.

“For us at Toby’s Estate, our approach to roasting is personal, passion driven and the defining factor that sets us apart. It’s learning to trust your senses while developing an understanding of what modern roasting technology has to offer,” says Head Roaster Nich Rae.

“The team has set up a roasting framework that defines Toby’s Estate style of coffee and they then use their skill and expertise to form the direction they want to take that coffee – for instance, increase or decrease particular attributes such as acidity, mouth feel, flavour and body”

Through Shift Volume 2, Toby’s Estate encourages the coffee community to ask, ‘are we doing enough to honour the work that farmers are achieving at origin?’

“The farmers we’re working with on a daily basis are continually innovating with processing and varietal cultivation, but as an industry are our roasting techniques evolving to get the best out of what these coffees have to offer?” Nich asks.

Shift Volume 2 includes three bags of the same coffee marked with an icon, each roasted to a specific profile to highlight how certain roast techniques affect the end coffee result.

One bag will have a finish temperature of 210°C, another will be 199°C, and the final bag will have a finish temperature of 203.5°C, which Toby’s Estate believes best represents the coffee.

A series of questions will also be included,with the answers contained on an accompanying scratch card.

For Shift Volume 2, Toby’s Estate has roasted coffee from Finca La Cumbre in El Salvador. This farm is owned by the most recent Knowledge Talks speaker, Emilio Lopez Diaz.

“La Cumbre translates to ‘The Peak’, fitting for the farm which won El Salvador’s Cup of Excellence in 2018. We are proud to be working with a coffee producer like Emilio for this volume of Shift,” Nich says.
