Jungle Fowl latte art by Victor Vu

Australian Latte Art Champion 2024 Victor Vu shares his jungle fowl design, part of the family of jungle-inspired pours he created for the World Latte Art Championships.

This funky jungle fowl design requires a steady hand and good skill in pouring rosettas. There are five rosettas in total in varying lengths, representing the bird’s feathers and neck.

Victor Vu of Ona Coffee Melbourne is the 2024 ASCA Australian Latte Art Champion.

Victor says this is one of his trickier designs as many of the rosettas and free pours are very close to each other. Perfectly texturised milk foam is the key to getting the jungle fowl right.

The Australian champ presented a series of jungle-inspired animals during the World Latte Art Championships in Copenhagen, Denmark, earlier this year. He tells BeanScene that he plans to compete in the national championships again in 2025 and is already working on the designs he will bring to the table.

“It was amazing to compete on the world stage and I want to give it another go next year. I’m still undecided on my theme. You are allowed to present the same designs, so I’m not sure if the animals will make a return to the competition,” he says.

Step 1

Using a competition-size latte art cup, build your base until the cup is just under half full.

Step 2

With the handle at three o’clock, from the top of the cup pour a 10-leaf rosetta down the right-hand side.

Step 3

To the left of the first rosetta, pour an 8-leaf rosetta and then another 6-leaf rosetta to the left of the second, aligning all three rosettas at the bottom of the cup.

Step 4

Turn the handle to four o’clock. From the base between the second and third rosettas, pour a small seven-leaf rosetta to meet the first rosetta.

Step 5

Using the weight of the flow, from the top of the third rosetta drag a small curve and then form a five-leaf rosetta to join the bottom rosetta.

Step 6

From the bottom of the first rosetta, drag the milk in a semi-circle to form the head and beak, with a small circle on top of the beak. Then create the wattle under the beak.

Step 7

Still using the weight of the flow, use the dry foam to form the inner face and then the eye within.

Step 8

Finally, add the comb on top of the head.
