Merlo Coffee to launch new bakehouse

Queensland coffee roaster, Dean Merlo is launching an artisan bakehouse at the Merlo flagship store in Bowen Hills on the 5 July.

Queensland roaster Merlo Coffee is launching an artisan bakehouse at its flagship store in Bowen Hills, due to open on 5 July.

Named after Founder Dean Merlo’s family’s silver-service restaurant, Milano Bakehouse is the latest European-inspired venue in the Merlo group. It will be the roaster’s 16th store across Queensland, joining cafés in Brisbane, Gold Coast, and Toowoomba.

The Bakehouse’s team of bakers will be led by French Head Baker Thomas Meneau and will produce about 1000 baked goods each day for a menu that’s been developed by Chef Shannon Kellam.

“We pride ourselves on delivering the very best quality, using the finest sustainable and natural ingredients,” says Dean.

“Our range will include delicate, hand-made, layered, buttery pastries and artisan breads. Our team, led by Shannon who’s celebrated for his excellence, innovation, and mentorship in the fine-dining restaurant industry, have been working hard with the highest attention to detail to finesse our baking processes.”

The Milano Bakehouse offering will include signature items such as sourdough batard, baguettes, and croissants.
