One of the world’s best restaurants just started roasting coffee

Noma, the three-Michelin-starred restaurant that’s been voted as the world’s best not once but five times, has launched Noma Kaffe, a new filter coffee subscription sourced and roasted by its team in Copenhagen, Denmark.

Launched on 6 March, Noma Kaffe will send subscribers two 250-gram bags of beans each month, hand-picked by Noma’s Head Sommeliers and Roasters. Alongside the coffees, the team will share stories and knowledge to encourage subscribers to fully appreciate the selections. The subscription is priced at US$65 per month.

On the Noma website, the company said: “Over a decade ago, we set out to make coffee an unforgettable part of the dining experience at Noma. After years working with amazing roasters and developing a brewing method fit to our menu and its pace, we eventually asked ourselves: Why not do it all?”

Coffee has long been a part of Noma’s restaurant experience. In 2013, the restaurant partnered with World Barista Champion Tim Wendelboe to create a coffee service for its menus. Going forward, the coffee served in the restaurant will be roasted at the Noma Kaffe roastery.

The original Noma restaurant was founded by Rene Redzepi in 2003. In 2023, Redzepi announced the restaurant would close at the end of 2024, but this was postponed. It is said Noma will stay open until 2025 to make way for test kitchen Noma 3.0.
