Byron Bay Cookie Company celebrates 25th anniversary

Byron Bay Cookie Company has collaborated with renowned chef Christine Manfield to celebrate its 25th anniversary.

To honour the occasion, Byron Bay Cookies is launching its new Salted Caramel Popcorn cookie.

The second cookie in Christine’s range encapsulates Byron Bay Cookie Company’s experimental and playful philosophy.

“The cookie combines a rich base with real salted caramel popcorn, butter croquant and pieces of decadent milk chocolate,” Christine said.

Christine was heavily involved in the development process of this cookie, visiting Byron Bay Cookie Company’s factory in Byron Bay to create the recipe and trial various flavour combinations.

“I am very particular about the type of ingredients used, all carefully selected to ensure the best quality and flavour possible,” she said.

Christine’s first cookie flavour, Passionfruit and Dark Chocolate, was released in December 2015.

The Salted Caramel Popcorn Cookie will launch nationally in David Jones as a 200-gram tin in June, with plans for a third flavour by Christine to be released later in 2016.

As one of Australia’s leading culinary ambassadors, Christine’s professional culinary life as restaurateur has culminated in three acclaimed restaurants including Paramount in Sydney from 1993 to 2000, East@West in London from 2003 to 2005, and Universal from 2007 to 2013. Her myriad of award-winning books include Dessert Divas and Paramount Desserts.

“We wanted to celebrate being 25 years young with an exciting, relevant and delicious partnership,” said Emilie Emond, Marketing Manager, Byron Bay Cookie Company. “Christine is known as one of Australia’s dessert queens so she was a natural fit for our brand.”

Byron Bay Cookie Company started with humble beginnings operating in a small country farmhouse in the Byron Bay hinterland in 1990.

In 2013, family-owned Australian food manufacturer Rinoldi purchased the Byron Bay Cookie Company. Established in 1878, Rinoldi’s know-how and expertise have allowed the Byron Bay Cookie Company to widen its distribution reach, while upscaling its production and refining its product development methodology yet ensuring that the Byron Bay Cookie Company continued to operate out of Byron Bay.

The company is now one of Australia’s leading producer of gourmet cookies, biscuits and crisp breads, and has crumbs spread over 30 countries around the globe.
