“Using Califia’s Vanilla Oat Milk in these dreamy chocolate muffins works a treat. The creamy texture and naturally sweet taste are so delicious, bonus – the milk is fortified with Calcium, Vitamin D and has no added sugar,” says Eden Gokkaya.

Recipe: Makes 6 to 8

Ingredients:

▪️1/2 cup Califia Farms Vanilla Oat milk
▪️1 tsp apple cider vinegar
▪️1 tsp vanilla extract
▪️1/3 cup coconut oil (or alternatively vegetable oil)
▪️1 cup plain baking flour
▪️1 tsp baking powder
▪️1/4 cup cocoa powder
▪️1/2 cup raw sugar
▪️1/4 cup dairy free dark choc chips

Method:

  1. Preheat oven to 180°C.
  2. In a large bowl, combine the Califia vanilla oat milk with coconut oil, apple cider vinegar and vanilla extract.
  3. Add the flour, baking powder, cocoa powder and sugar. Mix together to form a thick batter but do not over mix, only until the flour is no longer visible.
  4. Spoon mixture evenly into a greased or lined muffin pan. Sprinkle the choc chips on top of each muffin and bake for 25 mins or until a skewer comes out clean.
  5. Let them rest in the muffin pan for 15 mins before transferring to a cooling rack.
