Shannon Bennett to open Barista by Vue café in Melbourne

Celebrity chef Shannon Bennett’s new café, Barista by Vue, will open in Melbourne on Tuesday, 9 October.

The Little Collins Street venue will serve Five Senses coffee, specially selected to ensure Barista by Vue offers special pours and filters. On its opening day, the café will offer $1 coffees to anyone who brings a reusable cup.

Barista at Vue Venue Manager Todd Gatehouse says Barista’s minimalist offering will stand out in a saturated market.

Vue Group Executive Chef Justin James has designed the menu, which includes pastries, a daily salad and a daily sandwich which are tasted and tested in Vue Group kitchens.

The Vue Group says its commitment to sustainability is a theme that continues throughout Barista’s ethos and approach.

The timber in Barista’s build has been recycled from Bar 20. The pucks from the grinds are recycled in the gardens of Burnham Beeches, which grows the produce used to make the sandwiches and salad at Barista’s.

Alongside its $1 coffee promotion, Barista by Vue will launch a cup exchange policy to promote reusable cup use. Customers can borrow one or bring their own for a discount.

The café will be located at 430 Little Collins Street, Melbourne.
